Right click on the applet -> [Edit Connections] -> Edit any connection or new connection -> [Wifi Security]
(also, if selecting a new network, the option to enter a password for authentication is not available, only states, need a password or is a protected network, and [Cancel] button).
The only option availabe is [Security]: None - no options for any other security. Gnome-keyring, etc installed and reinstalled fine.
Manually configured the connection with nmcli - works fine
[Settings] -> [Wifi] -> Edit Connection -> [Security] -> has all the different options available and works fine (wpa, wpa2, etc)
Note - this was working fine before the latest mass update (November 17, 2017) - not sure on the version since a lot of updates came through in 1 big update.
